Don Mercer

Dr. Don Mercer holds a Ph.D. in Chemical Engineering from the University of Waterloo and is a Registered Professional Engineer in Ontario. Following his doctoral studies, Don spent 14 years in the food industry as Senior Research Engineer for Kraft General Foods Canada in Cobourg, Ontario. In 1992, Don joined Agriculture and Agri-Food Canada as a Special Advisor on Food in Ottawa and later served as a Commercialization Officer in Guelph, Ontario.

In 2003, Don joined the University of Guelph’s Department of Food Science and is now an Associate Professor. His main area of focus is Food Processing with particular interest in food dehydration. He has participated in numerous international assignments including food drying work in Equatorial Guinea, Malawi and Honduras, plus other food processing related projects in Ghana, Kenya, Tanzania, South Africa and India. Don is currently working with the International Union of Food Science and Technology to develop training courses for the agri-food industry in Sub-Saharan Africa. He lives in Spencerville, Ontario.
