Comforting, Convenient, Healthy…the Casserole

The air is cooler, the days are shorter, the schedules are busier…it must be Fall!

We all know how busy everyday life is, but we’re not always sure how to fit in a healthy and satisfying meal when we’re pressed for time. My solution...the casserole. Why? It’s inexpensive, tasty, healthy, and so easy to make.

I remember the casseroles my mom used to make and how much I looked forward to having a warm and soothing dinner set in front of me before heading outdoors to play. Now that I’m a mom, I love that I’m able to create the same feeling for my own kids when we’re all running in different directions.

I usually spend an afternoon on the weekend creating a few different casseroles—I then freeze them and pull them out on a night when we need to accommodate the entire family’s crazy schedule. I also love the fact that most casserole recipes call for ingredients I already have in my pantry.

The one book I turn to for inspiring and healthy casserole ideas is 300 Best Casserole Recipes by Tiffany Collins. No daily meal is left out—breakfast, lunch, dinner and dessert are all present and accounted for in the 300 choices, along with both gluten-free and vegetarian options—which my daughter loves!

And, because Tiffany has dedicated her life to leading a fit and healthy lifestyle (yes, she’s a busy mom, spokesperson, recipe maker, and a fitness instructor!), many of her recipes offer alternatives and tips, as well as ways to lighten the dishes. This book takes everyone’s favorite one-dish dinner and takes it beyond simple lasagnas and shepherd’s pies to make meals that your family will ask for again and again. I know mine do!
