Ajwar (diabetes-friendly)

Serve this delicious pâté with fresh whole-grain bread or toast, or as a dip with crudités. It keeps well in the fridge, so even if you are on your own, it is worth making enough for two.

Ingredients Makes 2 servings

2 thick slices eggplant 2
1 tbsp olive oil 15 mL
1 large red bell pepper, roughly chopped 1
1 large clove garlic 1
1 thick slice whole-grain bread 1
Pinch sea salt (optional) Pinch
Freshly ground black pepper


  • Food processor
  1. Fry the eggplant slices in the oil until they are just brown on each side.
  2. Combine fried eggplant, red pepper, garlic and bread in a food processor and purée. The pâté should not be totally smooth when puréed; rather, it should have the texture of a country terrine.
  3. Season with a pinch of salt and with pepper to taste. Let stand at room temperature for a couple of hours to allow the flavors to mature before serving.
Ajwar is a Yugoslavian pâté made with the red peppers so beloved in southeastern Europe.
