Apple Sweet Potato Soup (diabetes-friendly)

This dish uses fewer sweet potatoes than typical sweet potato soups and just enough apples to add a depth of flavor without piling on too many carbs. It makes a delicious Thanksgiving appetizer or comforting fall lunch.

Ingredients Makes 8 servings

4 to 5 sweet potatoes (2 lbs/1 kg), peeled and cut into chunks 4 to 5
2 Granny Smith apples, quartered 2
1 onion, finely chopped 1
3 cans (each 14.5 oz/410 mL) low-sodium chicken broth 3
1 tsp chopped fresh thyme (or 1⁄3 tsp/1.5 mL dried) 5 mL


  • Minimum 4-quart slow cooker
  • Blender
  1. Place the sweet potatoes, apples, onion, broth, and thyme in a slow cooker and stir to combine. Cover and cook on low for 8 hours, or until the sweet potatoes are tender.
  2. Let cool slightly, about 10 minutes. Purée the soup in a blender until smooth.
