3 | cans (each 14.5 oz/410 mL) low-sodium chicken broth | 3 |
1 tsp | chopped fresh thyme (or 1⁄3 tsp/1.5 mL dried) | 5 mL |
Instructions
Prep
- Minimum 4-quart slow cooker
- Blender
- Place the sweet potatoes, apples, onion, broth, and thyme in a slow cooker and stir to combine. Cover and cook on low for 8 hours, or until the sweet potatoes are tender.
- Let cool slightly, about 10 minutes. Purée the soup in a blender until smooth.
The fiber in this dish comes from the main ingredients — don’t forget the apple skins!
