Berry Smoothies (vegan, kid-fav)

September 14, 2018

Berry smoothies have become popular breakfast foods and snacks for many families. And for good reason: kids love the taste and can design their own smoothies, and parents can feel good about giving these nutritious drinks to their children any time of day.

Ingredients Makes 2 servings

1 cup frozen unsweetened raspberries 250 mL
1 cup frozen unsweetened strawberries 250 mL
1 cup vanilla-flavor soy milk 250 mL
1⁄4 cup silken tofu (about 2 oz/60 g) 50 mL
1 tbsp granulated natural cane sugar, or to taste 15 mL
Cranberry or other fruit juice, optional (see Tips)

  • Blender
  1. In blender, combine raspberries, strawberries, soy milk and silken tofu. Blend on high speed until thick and smooth.
  2. Add sugar to taste, and juice, if using, and blend on high speed for another 15 to 20 seconds.
This mixture will be very thick. If you like thinner smoothies, add juice and blend to the desired consistency. It may be necessary to stop the blender, scrape down the side of the jug with a rubber spatula, then blend again to get a smooth, even texture. To make it easier to blend the ingredients, run frozen berries under warm water to soften before blending. They should be frozen on the inside but soft on the outside so they chill the solution but blend easily.
