Chili con Carne

This is not your average chili recipe - but it sure should be! The complex flavors make it a ribbon winner. Perfect for busy weeknights!

Ingredients Makes 4 to 6 servings

11⁄2 cups dried red kidney beans 375 mL
3 strips apple wood bacon (see Tip), diced 3
1 cup finely chopped onion 250 mL
1 lb ground beef (preferably round) 500 g
1⁄2 jalapeño pepper, seeded and minced 1⁄2
1 cup chopped green bell pepper 250 mL
1 bay leaf 1
1 tbsp chili powder 15 mL
1 tsp chipotle chile powder 5 mL
Pinch cayenne pepper Pinch
Pinch ground cloves Pinch
1 can (8 oz/227 oz) tomato sauce 1
1 can (14 oz/398 mL) whole tomatoes, with juice 1
Salt and freshly ground black pepper
Finely chopped red onion
Shredded Cheddar cheese

Instructions

Prep
  • Medium to large rice cooker; fuzzy logic or on/off
  1. Sort, rinse, soak and drain kidney beans
  2. Set the rice cooker for the Quick Cook or Regular cycle. When the bottom of the bowl gets hot, sauté bacon until crisp. Drain off all but 1 tbsp (15 mL) fat. Add onion and sauté for about 3 minutes or until softened and translucent. Add beef, jalapeño and green pepper; sauté, breaking beef up with the back of a spoon, for 4 to 5 minutes or until beef is no longer pink.
  3. Add soaked beans, bay leaf, chili powder, chipotle chile powder, cayenne, cloves, tomato sauce and broth. Stir in tomatoes with juice, breaking tomatoes up with your fingers as you add them. Close the lid and reset for the Regular cycle. Set a timer for 11⁄2 hours.
  4. When the timer sounds, check to make sure beans are tender. If necessary, continue cooking, checking for doneness every 5 minutes. Switch to the Keep Warm cycle. Let stand for 10 minutes, stirring occasionally. Season to taste with salt and black pepper. Serve immediately, garnished with red onion and cheese.
Substitute ground turkey for the beef.
Apple wood bacon is smoked over apple wood embers (wood made from various apple trees) and imparts a richer flavor than regular bacon. You can substitute regular bacon if you wish.
