Chocolate Turtle Panini

Simple to make (get the kids involved - they'll love it) and certain to be the hit of the long weekend! 'These are "to die for" as one person said when I served them for dessert,' says author Alison Lewis.

Ingredients Makes 4 servings

5 tbsp butter or margarine, melted and divided 75 mL
12 caramel squares 12
1 cup semisweet chocolate chips 250 mL
8 slices challah or French bread (1⁄2-inch/1 cm thick slices) 8
1⁄3 cup chopped pecans 75 mL


  • Preheat panini grill to medium heat, if using
  1. In a small saucepan, heat 3 tbsp (45 mL) of the butter and caramels over low heat for 5 minutes or until melted. Remove from heat.
  2. Melt chocolate chips in a microwave_safe bowl on High for 1 minute or until melted.
  3. Butter half of the bread slices. Place bread slices, buttered side down, on a work surface. Spread melted chocolate equally over one side of 4 bread slices. Top with caramel mixture, nuts and remaining bread slices. Spread remaining butter equally over top sides of bread.
  4. Place sandwiches on preheated panini grill or in a large skillet and cook, turning once if using a skillet, for 3 to 4 minutes or until golden brown and cheese is melted. Serve immediately.
Use leftover challah bread for French toast and bread pudding recipes. It works great. If you can't find challah bread, any soft 1⁄2-inch (1 cm) thick white bread will work.
