Gluten-Free Soy-Free Golden Sesame Wafers

These wafers qualify as health food: sesame seeds provide calcium, omega-6 fats and antioxidants. These are ideal for a quick burst of energy whenever you're feeling sluggish! Grab some before your next hike...

Ingredients Makes 48 wafers (1 per serving)

2⁄3 cup amaranth flour 150 mL
1 tsp bread machine or instant yeast 5 mL
1⁄2 cup granulated sugar 125 mL
2 cups golden sesame seeds 500 mL
2 tbsp cracked golden flaxseed 30 mL
1⁄2 cup water 125 mL
1⁄3 cup vegetable oil 75 mL


  • Baking sheets, lined with parchment paper
  1. In a large bowl or plastic bag, combine amaranth flour, yeast, sugar, sesame seeds and flaxseed; mix well and set aside.
  2. Pour water and oil into the bread machine pan.
  3. Select the Dough Cycle. As the bread machine is mixing, gradually add the dry ingredients, scraping bottom and sides of pan with a rubber spatula. Try to incorporate all the dry ingredients within 1 to 2 minutes. Stop bread machine as soon as the kneading portion of the cycle is complete. Do not let bread machine finish the cycle. Set dough aside for 10 minutes.
  4. Meanwhile, preheat oven to 325°F (160°C), with oven rack placed in the top position.
  5. Drop dough by small spoonfuls at least 2 inches (5 cm) apart onto prepared baking sheets. Using a small square of parchment paper, cover each mound, then flatten with a flat-bottomed drinking glass. Using the flat edge of a metal spatula to assist, carefully peel away the parchment paper.
  6. Bake, one sheet at a time, on top rack for 11 to 13 minutes or until dark brown on top and bottom. Let cool on baking sheet for 2 to 3 minutes. Transfer to a rack and let cool completely.
Watch these carefully during baking — even as little as 1 minute too long can cause the bottoms to burn. Store in an airtight container at room temperature for up to 3 weeks. It may not seem like enough, but this dough really does make 4 dozen wafers.
