Greek Chicken

This super-easy one-pan dish is great way to prepare a quick, flavor-filled Greek meal.

Ingredients Makes 6 servings

11⁄2 lbs boneless skinless chicken breasts, cut into 1-inch (2.5 cm) cubes 750 g
6 cloves garlic, minced 6
5 plum (Roma) tomatoes, chopped 5
1 cup chopped onion 250 mL
1 cup chopped red bell pepper 250 mL
3⁄4 cup crumbled feta cheese 175 mL
1⁄2 cup freshly squeezed lemon juice, divided 125 mL
11⁄2 tbsp dried oregano 22 mL
11⁄2 tbsp dried basil 22 mL
30 mL canola oil 30 mL
1⁄2 cup pitted kalamata olives 125 mL
60 mL chopped fresh basil 60 mL

Instructions

Prep
  • Preheat oven to 375°F (190°C)
  • 13- by 9-inch (33 by 23 cm) glass baking dish
  1. In a large bowl, combine chicken, garlic, tomatoes, onion, red pepper, cheese, 1⁄3 cup (75 mL) of the lemon juice, oregano, basil and oil, stirring well to coat chicken. Spread in prepared baking dish and cover with foil.
  2. Bake in preheated oven for 30 minutes. Stir and replace foil. Bake for 20 to 30 minutes or until chicken is no longer pink inside. Stir in the remaining lemon juice, olives and basil.
