No-Bake Key Lime Pie (diabetes-friendly)

Wander into a tropical haven of limes, coconut and cashews. You may not be on an island, but it will taste like you are!

Ingredients Makes 1 serving

5 cashews 5
1 graham cracker square (21⁄2 by 21⁄2 inches/6 by 6 cm) 1
1 tsp coconut oil 5 mL
2 tbsp unsweetened shredded coconut 30 mL
1 tsp granulated sugar 5 mL
3⁄4 cup + 2 tbsp plain 2% Greek yogurt (7 oz/210 g) 205 mL
11⁄2 tsp grated Key lime zest, divided 7 mL
1 tbsp freshly squeezed Key lime juice 15 mL

  • 3⁄4-cup (175 mL) ramekin
  1. In a sealable plastic bag, using a mallet, hammer or rolling pin, crush cashews and graham cracker to the consistency of sand.
  2. In a small bowl, combine crushed graham cracker mixture and coconut oil; press into bottom of ramekin.
  3. In another small bowl, combine shredded coconut, sugar, yogurt, 1 tsp (5 mL) lime zest and lime juice. Scoop mixture onto graham cracker crust, smooth top and sprinkle with the remaining lime zest. Cover and refrigerate for at least 1 hour, until chilled, or for up to 24 hours.
If you can’t find Key limes, regular lime zest and juice will work in this recipe. If preparing this recipe for two people, simply double all of the ingredients.
