Papaya-Tomato Bruschetta (diabetes-friendly)

Swap a typical refined white bread for high-fiber, wholesome grains like this whole wheat baguette. Fresh fruit like papaya adds sweetness and antioxidants at the same time. What a deliciously healthy way to enjoy fruit!

Ingredients Makes 12 servings (2 slices each)

1 whole wheat baguette, cut into 24 slices (each 1⁄2-inch/1 cm thick) 1
2 tbsp olive oil, divided 30 mL
1 clove garlic, halved 1
1 papaya, peeled, seeded and chopped 1
4 plum (Roma) tomatoes, finely chopped 4
1⁄2 small red onion, finely chopped 1⁄2
1⁄2 cup chopped fresh cilantro 125 mL
1 tsp liquid honey 5 mL
1⁄2 tsp grated lemon zest 2 mL


  • Prep time: 10 minutes
  • Total time: 20 minutes
  • Preheat oven to 450°F (230°C)
  1. Brush the bread on both sides with 1 tbsp (15 mL) oil. Place on a baking sheet and bake in preheated oven for 7 minutes, or until golden brown and crisp. Rub the toasted bread very lightly with the cut garlic clove.
  2. In a medium bowl, combine the papaya, tomatoes, onion, cilantro, honey, lemon zest, and remaining oil. Spoon on top of the toasted garlic bread.
