Princess Pink Party Cupcakes

Celebrting Valentine's Day with the gals? These pink morsels will be the hit of the princess party. Sprinkle with pink sugar for added sparkle. In fact, princesses of any age will be happy to indulge in these treats. No oven needed!

Ingredients Makes 18 - 20 cupcakes

Paper Liners (optional)
1/4 cup butter, softened 60 mL
1 cup all-purpose flour 250 mL
1/2 cup granulated sugar 125 mL
3 tbsp strawberry-flavored gelatin powder 45 mL
1/2 tsp baking soda 2 mL
1/2 tsp baking powder 2 mL
1/4 tsp salt 1 mL
1 egg, at room temperature 1
1/3 cup sour cream 75 mL
1/4 cup milk 60 mL
1/2 tsp vanilla extract 2 mL
Buttercream Frosting, tinted pink

Instructions

  1. In a large bowl, using an electric mixer on medium-high speed, beat butter for 1 to 2 minutes or until fluffy. Add flour, sugar, gelatin, baking soda, baking powder, salt, egg, sour cream, milk and vanilla; beat for 1 to 2 minutes or until smooth.
  2. If desired, place paper liners in wells. Fill each well with about 11⁄2 tbsp (22 mL) batter. Bake for 6 to 8 minutes or until a tester inserted in the center of a cupcake comes out clean. Transfer cupcakes to a wire rack to cool. Repeat with the remaining batter.
  3. Frost with pink Buttercream Frosting.
Vary the color and flavor of the cupcakes by selecting a different flavor of gelatin, such as orange or blueberry. Be sure to use a matching or complementary frosting color. Seal leftover flavored gelatin in a sealable plastic bag, label and store in the cupboard for up to 3 months.
