Princess Pink Party Cupcakes
Ingredients Makes 18 - 20 cupcakes

|1/4 cup||butter, softened||60 mL|
|1 cup||all-purpose flour||250 mL|
|1/2 cup||granulated sugar||125 mL|
|3 tbsp||strawberry-flavored gelatin powder||45 mL|
|1/2 tsp||baking soda||2 mL|
|1/2 tsp||baking powder||2 mL|
|1/4 tsp||salt||1 mL|
|1||egg, at room temperature||1|
|1/3 cup||sour cream||75 mL|
|1/4 cup||milk||60 mL|
|1/2 tsp||vanilla extract||2 mL|
|Buttercream Frosting, tinted pink|
- In a large bowl, using an electric mixer on medium-high speed, beat butter for 1 to 2 minutes or until fluffy. Add flour, sugar, gelatin, baking soda, baking powder, salt, egg, sour cream, milk and vanilla; beat for 1 to 2 minutes or until smooth.
- If desired, place paper liners in wells. Fill each well with about 11⁄2 tbsp (22 mL) batter. Bake for 6 to 8 minutes or until a tester inserted in the center of a cupcake comes out clean. Transfer cupcakes to a wire rack to cool. Repeat with the remaining batter.
- Frost with pink Buttercream Frosting.
