Red Velvet Smoothie (raw)

A sweet and earthy blend of fresh beet juice and rich coconut butter, accented with aromatic vanilla, this raw smoothie is simply delicious.

Ingredients Makes 11⁄2 cups (375 mL)

3⁄4 cup filtered water 175 mL
1⁄4 cup fresh beet juice 60 mL
3 tbsp coconut butter (see Tips) 45 mL
1 tbsp raw cacao powder 15 mL
2 tsp raw vanilla extract 10 mL
1 banana 1

Instructions

  1. In a blender, combine water, beet juice, coconut butter, cacao powder, vanilla and banana. Blend at high speed until smooth. Serve immediately.
Fresh beet juice can be used to color many different foods, such as cakes, muffins and pastries, or even clothing fibers such as cotton. Coconut butter is a blend of coconut oil and coconut meat. You can usually find it in natural foods stores next to the coconut oil. When purchasing raw vanilla extract, look for alcohol-free extract, to avoid the taste of raw alcohol in your smoothie.
