Savory Baked French Toast

French toast is traditionally sweet, but this version has a tasty savory twist. This recipe is perfect for using up day-old Italian or French bread. Serve with a side salad.

Ingredients Makes 6 to 8 servings

6 tbsp basil pesto 90 mL
8 large oval slices bread (about 6 inches/15 cm wide) 8
8 slices deli ham 8
3 plum (Roma) tomatoes, sliced 3
8 large eggs 8
1⁄2 cup half-and-half (10%) cream 125 mL
11⁄2 cups shredded mozzarella cheese 375 mL

Instructions

  1. Grease an 11- by 7-inch (28 by 18 cm) baking dish.
  2. Spread pesto over one side of each bread slice, then layer a slice of ham and tomato slices on top.
  3. Carefully lift each stack into prepared dish, overlapping to fit. In a medium bowl, combine eggs and cream; pour evenly over bread.
  4. Cover and refrigerate for 30 minutes. Preheat oven to 350°F (180°C). Bake casserole for 40 minutes or until golden and puffed.
  5. Remove from oven and preheat broiler. Sprinkle cheese over casserole.
  6. Broil for 2 to 3 minutes or until cheese is melted and lightly browned. Let stand for 10 minutes before serving.
