Senate Salad Bowl

Why settle for another boring salad when you can indulge in this divine bowl of greens! So delicious and so healthy...

Ingredients Makes 4 servings

1 cup torn iceberg lettuce leaves 250 mL
1 cup torn romaine lettuce 250 mL
1⁄2 cup watercress, stems removed 125 mL
1 cup diced celery 250 mL
1⁄4 cup chopped green onion 60 mL
11⁄2 cups cubed cooked lobster or shrimp 375 mL
2 medium tomatoes, diced 2
1 avocado, peeled and sliced 1
1⁄2 medium grapefruit, sectioned 1⁄2
5 large pitted ripe olives, sliced 5
1⁄4 cup lemon juice, fresh, frozen or canned 60 mL
1 cup creamed cottage cheese 250 mL
1⁄4 tsp salt 1 mL
1⁄4 cup sour cream 50 mL
Pinch black pepper Pinch


  1. Toss together first five ingredients in large salad bowl. Combine next five ingredients, sprinkle all with lemon juice and add to greens.
  2. Garnish with additional tomato slices and ripe olives. Refrigerate until well chilled.
  3. Meanwhile, make dressing: combine all ingredients in blender or mixing bowl and beat until creamy smooth.
  4. Pour over salad just before serving.
