Stir-Fried Shrimp with Ginger (diabetes-friendly)

This quick, easy and delicious way to cook shrimp works well for just one person. Serve on a bed of lettuce, with a slice of crusty whole-grain bread or cooked brown rice.

Ingredients Makes 1 serving

3 green onions 3
1 tbsp vegetable oil 15 mL
1 tbsp slivered gingerroot 15 mL
1⁄2 cup sliced mushrooms 125 mL
4 oz large shrimp, peeled and deveined 125 g
Juice of 1 lime
Pinch sea salt Pinch


  1. Slice the green part of the green onions lengthwise into very thin matchsticks. Slice the white part into thin matchsticks and keep them separate.
  2. In a wok or wide frying pan, heat the oil over medium?high heat. Stir-fry the ginger for 2 minutes.
  3. Add the mushrooms and stir-fry for 1 minute.
  4. Add the shrimp and the white part of the green onions and stir-fry for 2 to 3 minutes or until shrimp are pink, firm and opaque.
  5. Stir in the green part of the green onion and the lime juice. Season with a pinch of salt and with pepper to taste. Serve immediately.
