Strawberry-Topped Brie

A sensory overload! Frozen ingredients add a wonderful textural and temperature contrast when paired with warm or room temperature ingredients. The perfect Valentine's Day, bridal shower or wedding buffet treat.

Ingredients Makes 6 canapés

1 strawberry 1
3 Black mission figs, cut in half lengthwise 3
1 tsp granulated sugar 5 mL
2 oz Brie cheese, cut into 6 cubes 60 g
6 small fresh mint leaves 6


  • Baking sheet and pie plate, lined with parchment paper
  1. Slice strawberry lengthwise into 6 thin slices and place on prepared baking sheet. Freeze for a minimum of 2 hours or overnight. Keep frozen until ready to assemble.
  2. Preheat broiler. Place figs, cut side up, on prepared pie plate. Evenly dust figs with sugar. Broil until sugar is caramelized, 2 to 4 minutes. Let cool to the touch.
  3. Place fig on a work surface, sugar facing up. Place a slice of frozen strawberry on top, then cube of Brie. Place on a spoon. Garnish with mint leaf and serve immediately.
Freezing the strawberry contributes a unique temperature and texture contrast but feel free to use fresh berries. It will impress your guests either way.
