Açai Superfood Bowl (vegan, gluten-free)

This deliciously healthy breakfast bowl is the ideal way to begin your day! So easy. So good for you!

Ingredients Makes 2 servings

1 cup freshly squeezed orange juice 250 mL
1⁄2 cup frozen blueberries (see Tips) 125 mL
1⁄4 cup chia seeds 60 mL
2 tbsp freeze-dried açai powder 30 mL
1⁄4 tsp alcohol-free organic vanilla extract 1 mL
1⁄2 cup chopped mango 125 mL
1⁄4 cup each chopped apple, raspberries and hulled strawberries 60 mL
2 tbsp raw shelled hemp seeds 30 mL
2 tbsp raw cashews 30 mL

Instructions

  1. In blender, at high speed, blend juice, berries, chia, açai powder and vanilla until smooth
  2. Transfer to a serving bowl. Top with remaining ingredients. Serve immediately.
Using frozen berries helps make the mixture thick and rich. You can substitute an equal quantity of frozen strawberries or raspberries for the blueberries. Açai powder is available in well-stocked supermarkets, natural food stores and online specialty stores.
