Hearts of Palm Salad

An original and delicious salad recipe from The Best 30-Minute Vegetarian Recipes by Marie-Claude Morin. The hearts of palm are at their best in this delectable and healthy salad, perfect for Spring.

Ingredients Makes 4

1 can (14 oz/398 mL) hearts of palm, drained 1
11⁄2 cups halved green beans 375 mL
2 tomatoes, diced 2
1⁄2 cup black olives, sliced 125 mL
1 tbsp mayonnaise 15 mL
1 tbsp apple cider vinegar (see Tip) 15 mL
1 tbsp olive oil 15 mL
Fresh or dried basil


  • Steamer basket
  1. Cut hearts of palm into rounds and place in a bowl.
  2. In a steamer basket set in a pot of boiling water, steam green beans for about 5 minutes or until tender-crisp. Rinse under cold water until chilled. Drain well and add to hearts of palm.
  3. In a salad bowl, combine tomatoes, olives, mayonnaise, cider vinegar, olive oil, and basil to taste. Add to bowl with hearts of palm and green beans just before serving.
Apple cider vinegar has antioxidant properties. It is apple juice that has been aged in oak barrels. It is appreciated for its fruity flavor.
